missed, last year everyone got a lobster but one, so
down to Market Square and the St. Andrews Wharf
early. The Fundy North Fisherman's Association will
be selling lobster right off the boat for Fair
Market Value! Take it home fresh or have it cooked
to order. The fishermen will make a donation to the
Canadian Foodgrain Banks & the local Harbour Lights
Campaign. Make sure you bring your own containers. |

Charlotte Dial-a-Ride, a local non-profit agency,

Street. We will also have pre-made salads for sale

For all six days of the St. Andrews Seafood Festival
"So Fresh" dinners, Chef Guillaume Delaune of
Kingsbrae Arms will incorporate different Stars of
the Sea into a sumptuous dinner each evening. Each
menu will showcase the best of what New Brunswick
has to offer. Selections will range from lobster to
halibut, scallops and crab to oysters and mussels.

As far as the guest chef dinner with Micahel
Stadlander is concerned, we are applying the same
food philosophy as is being being celebrated at the
Rossmount in celebration of seafood festival – the
menu will be created during the two days leading up
to the event when we will be roaming together
through Charlotte County to collect our products
directly from producers, our organic farmers as well
as foraging for some wild plants in season. It is
also a way to show our guest and friend the
beautiful attributes of the area. A Hint: Breviro
caviar will be on the menu that night! Best of all,
proceeds from this dinner will go to the “Eager
Beaver” program which gives young culinary talents
the chance to visit different chefs across the

Dishes in celebration of The Seafood Festival
include Local Smoked Salmon, prepared with Extra
Virgin Olive Oil, Warm Panko Crusted Bocconcini,
Olive Tapenade Crustini, Lemon, Caper Berry and
Balsamic Reduction. Also featured is the Seared Eco
Label Atlantic Salmon, prepared with cucumber
grapefruit slaw, warm bacon and sour cream potato
